The other day I had a mango that wasn’t really good, and I finally made a chutney out of it, kind of randomly. Delicious with lots of things: rice, foie gras, chicken etc. I made it again with a better mango this time and adjusted the proportions to have a chutney that I love. I could eat it as it is with a spoon! A really simple recipe while waiting for the little caloric bomb that will arrive next week on the blog…<\/div>\n<\/div>\n

<\/a>For the chutney:<\/p>\n

400g of mango flesh<\/b><\/li>\n

150g of caster sugar<\/b><\/li>\n

1\/2 teaspoon of salt<\/b><\/li>\n

black pepper<\/b><\/li>\n

75ml white vinegar<\/b><\/li>\n

2 bird peppers<\/b><\/li>\n

1cm freshly grated ginger <\/b><\/li>\n<\/ul>\n

Peel and cut the mango into pieces.<\/p>\n

Put the pieces in a saucepan with the sugar, salt and vinegar.<\/p>\n

Finely chop the red peppers. You can put only half of the seeds. I put the whole thing in, because I love the spice! Also add ground black pepper to taste. <\/div>\n

Grate the ginger.<\/p>\n

Mix well and cook for about 20 minutes over moderate heat.<\/p>\n

After this time, mix a little with an immersion blender.<\/p>\n

There should still be some texture left.<\/p>\n

Cook for another 10 to 15 minutes. The chutney should have a nice texture, like a jam.<\/p>\n

Store in a cool place or in a sterilized jam jar. <\/div>\n
