Lemon and saffron are made for each other in this recipe that I had in mind for a while. A creamy risotto with a slight acidity that excites the taste buds!&nbsp;<\/div>\n<div class=\"separator\" style=\"clear: both; text-align: justify;\">\n<\/div>\n<div class=\"separator\" style=\"clear: both; text-align: center;\">\n<\/div>\n<p><a name=\"more\"><\/a><\/p>\n<div style=\"text-align: justify;\">\nAttention to the purists of risottos ! In this recipe, I use two tablespoons of mascarpone to &#8220;assemble&#8221; the risotto. This is not necessarily usual, but you can see it in Italy! And the sweetness of the cheese will temper the nervousness of the lemon for a truly wonderful result.<\/p>\n<p>Recipe for Lemon and Saffron Risotto for 4 people:<\/p><\/div>\n<div style=\"text-align: justify;\">\n<\/div>\n<div style=\"text-align: justify;\">\n<ul>\n<li><b><span class=\"Apple-style-span\" style=\"\">300g of &#8220;carnaroli&#8221; or &#8220;arborio&#8221; rice<\/span><\/b><\/li>\n<li><b><span class=\"Apple-style-span\" style=\"\">1 liter of vegetable broth (with two extra maggi cubes!)<\/span><\/b><\/li>\n<li><b><span class=\"Apple-style-span\" style=\"\">2 small shallots<\/span><\/b><\/li>\n<li><b><span class=\"Apple-style-span\" style=\"\">15cl of white wine<\/span><\/b><\/li>\n<li><b><span class=\"Apple-style-span\" style=\"\">1 tablespoon of olive oil<\/span><\/b><\/li>\n<li><b><span class=\"Apple-style-span\" style=\"\">40g of salted butter<\/span><\/b><\/li>\n<li><b><span class=\"Apple-style-span\" style=\"\">2 good pinches of&nbsp;pistils&nbsp;of saffron<\/span><\/b><\/li>\n<li><b><span class=\"Apple-style-span\" style=\"\">zest of 1+1\/2 untreated lemons&nbsp;<\/span><\/b><\/li>\n<li><b><span class=\"Apple-style-span\" style=\"\">2 tablespoons of mascarpone<\/span><\/b><\/li>\n<\/ul>\n<div>\n<span style=\"\"><b><br \/><\/b><\/span><\/div>\n<ul>\n<li><b><span style=\"\">12 beautiful scallops<\/span><\/b><\/li>\n<li><b><span style=\"\">or 4 white fish fillets<\/span><\/b><\/li>\n<li><b><span style=\"\">60g of salted butter<\/span><\/b><\/li>\n<\/ul>\n<\/div>\n<div style=\"text-align: justify;\">\n<\/div>\n<div style=\"text-align: justify;\">\nStart by finely chopping the shallots.
