Especially when it is made with a homemade caramelized puff pastry and a fresh, rich and creamy cream. I had put the 1000 sheets vanilla in my first book, &#8220;my desserts&#8221; that I had not remade since the release. So I really wanted to make the praline version for my cooking blog. My version why? Because I put the cream together to get what I had in mind and that I like. I made several attempts to do this. I start with a very firm, butter-enriched pastry cream, which I will beat with homemade praline paste. Then I add a whipped cream and mascarpone. In fact, this is the definition of diplomatic cream: custard&nbsp;+ whipped cream. The result is unbelievably good: the cream is rich as it should be, while finally not being very sweet. This dessert is only worth it with homemade puff pastry. So you&#8217;ll have to start the day before. It takes a little work, but the 1000 sheets is divine!&nbsp;<\/div>\n<div style=\"text-align: justify;\">\nA real institution that Pierre Herm\u00e9 has made known. Of course, the 1000 sheets has been around for a long time, but this praline version with a layer of crunchy praline comes from him. So I copied the assembly to make the version I like.&nbsp;<\/div>\n<\/div>\n<div style=\"text-align: center;\">\n<\/div>\n<div style=\"text-align: center;\">\n<\/div>\n<p><a name=\"more\"><\/a>Recipe for a mille feuilles of 26x11cm (5 very large parts or 10 smaller ones!) :<\/p>\n<ul style=\"text-align: left;\">\n<li><b><span style=\"\">half a homemade inverted puff pastry (recipe <a href=\"https:\/\/stagingapp15670.cloudwayssites.com\/2010\/12\/la-pate-feuilletee-inversee.html\">HERE<\/a>)&nbsp;<\/span><\/b><\/li>\n<\/ul>\n<p><b><span style=\"\">Praline cream :&nbsp;<\/span><\/b><\/p>\n<div style=\"text-align: left;\">\n<\/div>\n<ul>\n<li><b><span style=\"\">250ml of semi-skimmed milk<\/span><\/b><\/li>\n<li><b><span style=\"\">60g of soft butter<\/span><\/b><\/li>\n<li><b><span style=\"\">70g of sugar<\/span><\/b><\/li>\n<li><b><span style=\"\">55g of egg yolk<\/span><\/b><\/li>\n<li><b><br \/>\n  <span style=\"\">30g of cream powder&nbsp;<\/span><br \/>\n<\/b><b><br \/>\n  <span style=\"\">&nbsp;(or cornstarch)<\/span><br \/>\n<\/b><\/li>\n<li><b><span style=\"\">160g of homemade almond-hazelnut praline paste with 60% dried fruit (recipe<a href=\"https:\/\/stagingapp15670.cloudwayssites.com\/2010\/01\/praline-en-pate-ou-pralin-en-poudre.html\"> HERE<\/a>)<\/span><\/b><\/li>\n<li><b><span style=\"\">190g of full cream<\/span><\/b><\/li>\n<li><b><span style=\"\">150g of mascarpone&nbsp;<\/span><\/b><\/li>\n<li><b><span style=\"\">2 bags of chantifix<\/span><\/b><\/li>\n<\/ul>\n<div style=\"text-align: left;\">\n<b><br \/>\n  <span style=\"\">Praline&nbsp;<\/span><br \/>\n<\/b><span style=\"\"><br \/>\n  <b>crunchy<\/b><br \/>\n<\/span><\/div>\n<div style=\"text-align: left;\">\n<\/div>\n<ul>\n<li><b><span style=\"\">200g of homemade praline paste<\/span><\/b><\/li>\n<li><b><span style=\"\">60g of milk chocolate<\/span><\/b><\/li>\n<li><b><span style=\"\">20g of soft butter<\/span><\/b><\/li>\n<li><b><span style=\"\">40g of crushed cr\u00eapes dentelles&nbsp;<\/span><\/b><\/li>\n<\/ul>\n<p><\/p>\n<div style=\"text-align: left;\">\n<\/div>\n<div style=\"text-align: justify;\">\n<span style=\"font-family: inherit;\">Start the day before by preparing the inverted puff pastry. This recipe is incredibly delicious if you make the dough at home. I took here a frame of 22cm of side. This is the most practical thing.
