So I wanted to make this Vietnamese salad that I had enjoyed in Ho Chi Minh. Small pieces of pork, marinated, grilled and caramelized on a salad with fresh, complex and multiple flavors. It&#8217;s a real trip in your bowl and you&#8217;ll hardly feel bad about it! Very simple to make, the most complicated part is to gather all the ingredients.<\/div>\n<\/div>\n<div style=\"text-align: center;\">\n<\/p>\n<div style=\"text-align: justify;\">\n<a name=\"more\"><\/a>For 4 people:<\/div>\n<div style=\"text-align: justify;\">\n<\/div>\n<\/div>\n<div style=\"text-align: center;\">\n<\/div>\n<p><b><span style=\"\">Recipe for marinated pork:<\/span><\/b><br \/>\n<b><span style=\"\">-400g of boneless pork loin<\/span><\/b><br \/>\n<b><span style=\"\">-5 cloves of garlic<\/span><\/b><br \/>\n<b><span style=\"\">-3 small shallots (roughly as much garlic as shallot by weight)<\/span><\/b><br \/>\n<b><span style=\"\">-3 tablespoons of chopped lemongrass<\/span><\/b><br \/>\n<b><span style=\"\">-3 tablespoons of honey<\/span><\/b><br \/>\n<b><span style=\"\">-4 tablespoons of nuoc m\u00e2m<\/span><\/b><br \/>\n<b style=\"\">-2 tablespoons of oil<\/b><br \/>\n<b><span style=\"\">-ground black pepper<\/span><\/b><br \/>\n<b><span style=\"\"><br \/><\/span><\/b><br \/>\n<b><span style=\"\">Salad:<\/span><\/b><br \/>\n<b><span style=\"\">Sauce:<\/span><\/b><br \/>\n<b><span style=\"\">-juice of 2 large limes<\/span><\/b><br \/>\n<b><span style=\"\">-4 tablespoons of nuoc m\u00e2m<\/span><\/b><br \/>\n<b><span style=\"\">-5 tablespoons of sugar<\/span><\/b><br \/>\n<b><span style=\"\">-2 tablespoons of water<\/span><\/b><br \/>\n<b><span style=\"\">-4 cloves of garlic, chopped<\/span><\/b><br \/>\n<b><span style=\"\">-1 small red or green bird pepper<\/span><\/b><br \/>\n<b><span style=\"\"><br \/><\/span><\/b><br \/>\n<b><span style=\"\">-Lettuce or oak leaves<\/span><\/b><br \/>\n<b><span style=\"\">-150g of dried rice noodles to rehydrate (I took the noodles for pho, but you can take rice vermicelli)<\/span><\/b><br \/>\n<b><span style=\"\">-water bindweed<\/span><\/b><br \/>\n<b><span style=\"\">-shiso leaves<\/span><\/b><br \/>\n<b><span style=\"\">-Thai basil<\/span><\/b><br \/>\n<b><span style=\"\">-Chinese ball<\/span><\/b><br \/>\n<b><span style=\"\">-ma-om leaves (or mint leaves if necessary)&nbsp;<\/span><\/b><br \/>\n<b><span style=\"\">-200g of mung bean sprouts (often called &#8220;bean sprouts&#8221;)<\/span><\/b><br \/>\n<b><span style=\"\"><br \/><\/span><\/b><br \/>\n<b><span style=\"\">-1 tablespoon of unsalted roasted peanuts per serving<\/span><\/b><br \/>\n<b><span style=\"\">-1 tablespoon of oil per serving<\/span><\/b><br \/>\n<b><span style=\"\">-some toasted sesame seeds for decoration<\/span><\/b><\/p>\n<p><\/p>\n<div style=\"text-align: justify;\">\n<i>First, freeze the pork loin so that it is easier to slice. I used frozen lemongrass here, already chopped, which I always have in my freezer. Of course, you can instead chop fresh lemongrass (2 sticks) by removing the base and a good part of the stem (it is in the bulb that the taste is concentrated!!).  &nbsp;Also add ground black pepper. Otherwise, do what I do, broil the pork in your oven on broil mode. I swear that this operation is very delicate, because it is very difficult not to devour everything before arranging the small pieces of pork on the salad&#8230;!
