Clean the salmon well, check for stoppage.
Cut it into thin slices, then into small pieces, but definitely not in a blender!
Put it in a bowl, add the olive oil and soy sauce.
Add lime juice, salt and pepper.
Chop the half shallot finely.
Chop the chives and basil leaves. Use the equivalent of two tablespoons of each.
Add everything to the salmon. Mix well and chill for at least three hours.
