For this new year, I propose you a new recipe of galette! This time, it was the scents of lemon, orange and Grand Marnier that invaded my kitchen and I can assure you that we enjoyed ourselves like never before! The flavors are sweet and magical. I add small cubes of candied orange peel that blend perfectly with the almond powder. A recipe I will definitely make again!
For a 24cm cake :
- 800g of inverted puff pastry recipe HERE
- 150g almond powder
- 120g of powdered sugar
- 150g of melted soft butter
- 75g of egg
- 15g of cornstarch or cream powder
- 40g of Grand Marnier
- 50g candied orange peel
- the zest of a large organic orange
- the zest of an organic lemon
Prepare the almond cream by mixing the melted butter, the almond powder, the powdered sugar, the 75g of egg (by breaking two eggs in omelette and by thinking the necessary quantity), the cornstarch. Add the organic orange and lemon peel.
Don’t forget the Grand Marnier!
Finish with the cubed candied orange peel.
A final mix and put in the fridge for at least an hour.
Cut the puff pastry into two equal parts, then roll out the pastry into two 2mm thick squares.
Take two circles (or plates), one 24cm and one 20cm. The small one will be used as a marker to place the almond cream, the other for the cutting mark for the puff pastry. For the moment, don’t cut anything!
Put a little water on the entire surface of one of the puff pastries. It should not be soaked, just wet and sticky.
Pour the cream into the small circle in the center.
Remove the circle and place the second dough on top.
Press all around the cream to seal it well. Take the 24cm circle and place it so that the cream is in the center. This leaves a 2cm margin around the cream. Do not press the circle in but cut with a knife on the outside.
You can chew the dough. Chill for at least 1 hour.
Turn the cake over completely. The flat side of the bottom meets the top. I use this flipping technique to make the cake bake more beautifully, plus it’s easier to make the designs with a knife on a flat surface. Brush on a layer of egg yolk. Put back in the fridge for 30 minutes, until the yolk dries a little.
I then place the patty on an aerated siliconized baking mat, but parchment paper will do! Make the design with the tip of the knife, without pushing the blade in too far.
Preheat the oven to 200°C on fan mode. Place 4 small 3cm high circles (or wine bottle corks cut to 3cm high) around the cake.
After 10 minutes of cooking, place a parchment paper and a baking sheet or a griddle on top of the 3cm high circles. This way you will block the growth of the cake and it will be much prettier.
Bake for a total of 35 to 40 minutes, watching and adjusting to your oven.
Galette des rois orange citron et Grand Marnier
Ingredients
- 400 g pâte feuilletée inversée 800g avant la coupe
- 150 g poudre d'amande
- 120 g sucre glace
- 150 g beurre doux
- 75 g œuf
- 15 g maïzena
- 40 g Grand Marnier
- 50 g écorce orange confite
- 1 zeste orange bio
- 1 zeste citron bio
Instructions
- Préparez la crème d’amande en mélangeant le beurre fondu, la poudre d’amande, le sucre glace, les 75g d’œuf (en cassant deux œufs en omelette et en pensant la quantité nécessaire), la maïzena. Mettez le zeste d’orange bio et celui du citron. N’oubliez pas le Grand Marnier !
- Terminez avec les écorces d’orange confite en cubes.
- Un dernier mélange puis mettez au frais au moins une heure.
- Coupez les 800g de pâte feuilletée en deux parts égales, puis étalez-la pâte en deux carrés de 2mm d’épaisseur. Après la coupe il restera 400g en gros dans la galette et 400g de chutes.
- Prenez deux cercles (ou des assiettes), un de 24cm et un de 20. Le petit servira de repère pour placer la crème d’amande, l’autre pour le repère de coupe pour la pâte feuilletée. Pour le moment ne coupez rien !
- Mettez un peu d’eau sur toute la surface d’une des pâtes feuilletées. Elle ne doit pas être trempée, mais juste humide et collante. Versez la crème dans le petit cercle au centre.
- Enlevez le cercle puis posez la deuxième pâte sur le tout.
- Appuyez bien tout autour de la crème pour bien sceller. Prenez le cercle de 24cm puis posez-le de façon à avoir la crème bien au centre. Cela laisse une marge de 2cm autour de la crème. N’enfoncez pas le cercle mais coupez au couteau sur la partie externe.
- Vous pouvez chiqueter la pâte. Mettez le tout au frais au moins 1 heure.
- Retournez la galette entièrement. Le côté plat du dessous se retrouve au dessus. J’utilise cette technique du retournement pour que la galette cuise plus joliment, de plus il est plus facile de faire les dessins au couteau sur une surface plate. Passez une couche de jaune d’œuf au pinceau. Remettez au frais 30 minutes, le temps que le jaune sèche un peu.
- Je pose ensuite la galette sur un tapis de cuisson aéré siliconé, mais un papier sulfurisé fera l’affaire ! Faites le dessin à la pointe du couteau, sans trop enfoncer la lame.
- Mettez le four à préchauffer à 200°C sur mode ventilé. Posez 4 petits cercles de 3cm de hauteur (ou des bouchons de bouteilles de vin coupés à 3cm en hauteur) autour de la galette.
- Après 10 minutes de cuisson, posez un papier sulfurisé puis une plaque ou un grille à pâtisserie, celle-ci viendra se poser sur les cercles de 3cm de hauteur. De cette façon vous allez bloquer la pousse de la galette et elle sera beaucoup plus jolie.
- Laissez cuire au total 35 à 40 minutes en surveillant et en adaptant à votre four.
