Instructions

Mettez les pistaches à griller 16 minutes au four préchauffé sur chaleur tournante à 170°C.
Mettez-les au mixeur et broyez-les en poudre pas trop fine.
Mettez dans un récipient, le beurre doux fondu, le sucre et les zestes de deux oranges non traitées.
Ajoutez les 230g d’œuf (environ 4 gros œufs).
Ajoutez les poudres de pistache et d’amande, la semoule fine et la levure chimique. Mélangez bien.
Versez dans un moule chemisé de papier sulfurisé.
Faites cuire 1h15 dans un four préchauffé sur chaleur tournante à 155°C.
Laissez tiédir avant de démouler, puis enveloppez de film étirable. Mettez-le une nuit au frais avant de le couper en tranches et de le déguster.

A rich, dense cake as I sometimes like them, but not at all dry, quite the opposite! Here I use roasted pistachios, orange zest and fine wheat semolina. The result is surprisingly fragrant. The fine wheat semolina, which is not couscous semolina, gives this cake a very special texture, and the orange blends wonderfully with the pistachios.

240g raw pistachios
230g melted soft butter
190g sugar
zest of 2 untreated oranges
230g of egg
100g almond powder
185g fine wheat semolina (not couscous semolina!)
5g of baking powder

Toast the pistachios for 16 minutes in an oven preheated to 170°C.

Put them in a blender and grind to a fine powder.

Place the melted sweet butter, sugar and zest of two untreated oranges in a bowl.

Add the 230g of egg (about 4 large eggs).

Add the pistachio and almond powders, fine semolina and baking powder.

Mix well.

Pour into a mould lined with baking parchment.

Bake for 1h15 in an oven preheated to 155°C.

Let cool before unmolding, then wrap in cling film. Chill overnight before slicing and serving.
