Sauce au Caramel au Beurre Salé

Voici ma recette de la sauce au caramel au beurre salé. Une fois le doigt plongé dedans, impossible de ne pas devenir complètement accro! J’utilise cette sauce surtout pour la mettre dans des crêpes chaudes. Elle est réalisée en moins de 15 minutes et se conserve dans un pot à confiture. J’ai ajusté les proportions pour qu’elle ait une consistance bien moelleuse à température ambiante, mais délicieusement coulante et nappante une fois réchauffée. Alors tous à vos casseroles!

Ingredients

Recette pour un pot à confiture de caramel:

180 g sucre
110 g de beurre salé
20 cl de crème entière épaisse à 40%
4 pincées de fleur de sel

Instructions

Commencer par mettre le beurre, la fleur de sel et le sucre dans une casserole à fond épais. Ajouter un trait d’eau (juste de quoi imbiber un petit peu le sucre).
Faire fondre sur feu modéré à fort en mélangeant avec une cuiller en bois.
Le mélange va mousser et commencer à se colorer. Il faut alterner et modifier le feu en fonction du résultat que l’on observe dans la casserole.
Le caramel va se faire. Il faut bien mélanger pour éviter que le fond brûle.
En dehors du feu, quand le caramel a une belle couleur brune, ajouter la crème épaisse à 40%.
Verser le caramel très chaud dans un pot à confiture bien propre. Laisser refroidir et conserver ensuite au frais. Ce caramel a une consistance parfaite car il se tartine facilement quand il est frais et fond parfaitement quand il est réchauffé.
On peut donc le mettre sur une crêpe chaude ou dans une crêpe froide que l’on passe quelques instants au four à micro-onde.
Mais je préviens tout de suite qu’il est très difficile de la garder longtemps car les doigts ont une fâcheuse tendance à plonger dedans!

Here is my recipe for salted butter caramel sauce. Once you’ve plunged your finger into it, it’s impossible not to become completely addicted! I use this sauce mainly to put it in hot pancakes. It is made in less than 15 minutes and can be stored in a jam jar. I adjusted the proportions so that it has a very soft consistency at room temperature, but deliciously runny and smooth when warmed up. So all to your pots!

Recipe for a caramel jam jar:

-180g of sugar
-110g of salted butter
-20cl of 40% heavy cream
-4 pinches of fleur de sel

Start by putting the butter, fleur de sel and sugar in a thick-bottomed saucepan. Add a dash of water (just enough to soak the sugar a little).

Melt over moderate to high heat, stirring with a wooden spoon.

The mixture will foam and begin to color. It is necessary to alternate and modify the fire according to the result which one observes in the pan.

The caramel will be done. Mix well to prevent the bottom from burning.

Off the heat, when the caramel has a nice brown color, add the 40% heavy cream.

Pay attention to any projections. First you have to add a little cream, then mix and then put the rest. Mix well.

Put back on the heat to bring back to the boil and remelt any small pieces of sugar that remain or block caramel.

Pour the very hot caramel into a clean jam jar. Leave to cool and then store in the fridge. This caramel has a perfect consistency because it spreads easily when fresh and melts perfectly when heated.

You can therefore put it on a hot pancake or in a cold pancake that you spend a few moments in the microwave oven.

But I immediately warn that it is very difficult to keep it for a long time because the fingers have an annoying tendency to dive into it!
