Cette recette à l'air parfaite, je vais la tester pour Noel. J'ai cependant une question sur le beurre de cacao, elle a déjà été posée mais sauf erreur de ma part vous n'avez pas encore répondu : Le beurre de cacao pour l'intérieur des chocolats n'est pas le beurre de cacao mycryo c'est bien cela? Je vais investir dans le mycryo car ça m'a l'air bien plus pratique que le tempérage classique, mais peut-on se passer du beurre de cacao classique dans coeur du chocolat? Dans ce cas que modifier en terme de proportions?

j'aurais cependant une question : après avoir fini les escargots, il me reste de la couverture noire durcie (elle avait été tempérée au mycryo). Pour la réutiliser sans ajouter de couverure noire, dois-je refaire toutes les étapes du tempérage avec ou sans ajout de mycryo ?

1 j'utilise un pinceau de cuisine avec des poils (pas des bouts de silicone)
2 ce serait plus facile avec un poche à douille et plus rapide mais j'avoue que quand je fais des chocolats, je le fais à la cuiller… car je n'ai pas le courage de faire la vaisselle par la suite!! Tout dépend de la quantité en fait. Moins il y en a, plus la cuiller fera l'affaire, sinon la poche est indispensable!
