Qatayef, or atayef (not to be confused with ktayef, pastry made from angel hair) is a delicious pancake filled with ashtalieh cream, rose and orange blossom water and crushed roasted pistachios. Everything is served with a flavored syrup and gives a final result that is not very sweet. This pastry is found in Lebanon, but also in Egypt and other countries of the Levant. This presentation with half of the pancake folded to make a cone is called assafiri.

Leek, chorizo and goat cheese tart
It had been a while since I had made a savory pie. I also like to make thick pies, giving high slices that you just want to bite into. Here is a new one, with a simple and generous taste, with leeks, chorizo and goat's cheese that will reduce the spiciness. It's up to you to choose the chorizo you like, mild, spicy or extra-strong! To be devoured in all ways: cold, lukewarm or hot.

Lobster rolls and Shrimp rolls
I am a real fan of those shrimp or lobster hot dogs that we see in the United States and more and more in our country. So I suggest both versions, because the lobster version is quite expensive. With the very soft bun, it is a total delight! A little lemon and celery to finish it off, and you're done!

Pan-fried chicken, chard, mushrooms, sun-dried tomatoes and Boursin® cream sauce
Here is a second recipe in partnership with Boursin® Garlic and Fine Herbs. After the risotto(recipe HERE), I have this time concocted a pan with chicken, mushrooms, chard and sundried tomatoes, in a cream and Boursin sauce. It is a real delight and is best served with a simple white rice.

Lasagna Bolognese
I've just returned from another short stay in Italy. I always enjoy it! I had a really delicious lasagna and I wanted to share my version with you. It takes a bit of time, as I make it the day before, with a long cooking time for the Bolognese stew. But the result is worth it. I made everything homemade, even the pasta, which is very easy with a rolling mill, but you can of course put ready-made lasagna in it. The result is extremely tasty and creamy, with a little cheese inside. I had already proposed you the real ragout à la bolognaise, that I modify here a little to stick to the idea of lasagna that I had in mind!

No-Bake Cheesecake
I know that my cheesecake recipes on my cooking blog have been very popular with a large portion of my readers. I bet this one will take over! For once, this is a no-bake cheesecake I'm proposing. I also give you a very simple recipe for mango passion fruit coulis. So I'll warn you right now, this cake is rich, but completely addictive! The texture is rich and creamy, just the way I like it, but holds up perfectly despite the lack of cooking.

Raspberry vanilla lemon tart
A little wonder in the mouth, that's really the feeling when you bite into a piece of this pie. A crisp pastry, a rich and fluffy almond cream, a tender and fresh vanilla ganache and juicy raspberries. For this pie, I give you my wonderful vanilla ganache recipe that I developed 7 years ago and published only in my first book "mes desserts" (Flammarion 2014). Nothing complicated here and a visual that will delight your guests for dessert in the middle of summer!

Strawberry, lemon and basil pie
A new strawberry pie with a new pastry technique. I had seen a similar pie at Yann Couvreur's, but I didn't have the time to taste it. I figured out how to make my own version with a basil creamer and lemon almond cream and the result went beyond my expectations. Especially with the strawberries in season which are currently sublime! For the technique, an airy canvas is used for the bottom and side of the circle, which prevents the dough from puffing up. It can be baked without peas or flour sack technique. It also gives the pie a nice pattern.

Cherry clafoutis. The real one…and my version!
With or without pits… Such is the eternal dilemma for the clafoutis! If you go to the Limousin and say you are going to make a clafoutis with pitted cherries, I don't give a damn! So I propose you the classic version of this dessert, with the basic dough and the whole cherries. But after experimenting with or without the pits, I can tell you that personally, it doesn't change the taste. It seems that the stone, while cooking, leaves the flavor, but no one has felt the difference… And yes, I admit it, I prefer a clafoutis without a stone, which is easier to eat. So I leave you also my clafoutis recipe, less traditional certainly. You will have the choice and I ask the purists to let me eat without me having to spit out my pits

Chocolate Tartlets
These little tartlets are really delicious! A fine crispy pastry with a very chocolatey firm and melting cream-ganache, a pure wonder! My version is simple to make and here I give you my “flour bag” technique which is perfect for making a sweet pastry base!
