Fall is here with its share of comforting delights. I love nuts and I've probably come up with recipes mixing honey and nuts on my blog, but I always enjoy looking for new textures. Here, the dough resembles a shorbread, topped with a honey and semi-salted butter caramel, richly garnished with nuts. The texture is fantastic and these squares are very addictive! Bear's garlic pie

Last recipe with wild garlic for this year. At the moment I am publishing a little less, as I have just finished my 7th book which will be released in October 2021, and I also often go to Brittany with my family. This time I propose a tasty bear garlic pie, simple to make and very original. As soon as I can post a little more, I promise, I will! Chocolate, coffee, walnut and candied orange fondant

This is a very fondant cake, with nuts, coffee, chocolate and candied orange. The whole thing goes together beautifully. I also add a creamy dark chocolate ganache. The retro look reminds me of the cakes in the cookbooks I grew up with, but I like simple decorations every now and then, where only the taste matters. Plus, this cake is naturally gluten-free!

Avocado, salmon and Samurai sauce inverted Makis

I had tasted these inverted makis in a "fusion" restaurant in Santiago, Chile with two friends. Although not very traditional, they were really delicious. I had proposed on the blog, Japanese makis with chilli salmon and Korean gimbaps with chicken. Two similar techniques, but with vinegar rice for the first and sesame oil rice for the second. As we are clearly on the "fusion food" here, I wanted to test a rice that was both vinegared (in lesser proportions) and with sesame oil. The result is perfect for me. Here with crispy shrimp and cooked and smoked salmon, the makis are rich but decadent and appetizing.
