Pour le vin blanc sec, ne faut il pas préférer un assez acide, genre muscadet ?

Un copié/collé et hop c'est dans ma liste des plats à tester très vite. Il se pourrait bien que je remplace l'orange par du citron.
Il m'est arrivé pour certaines sauces de mixer les échalotes pour ceux qui n'aiment pas et si on n'a plus la texture on a bien le goût.
