اقدم لكم وصفتي لحم بقري مقرمش بالكراميل والفلفل. يظل اللحم هشًا بفضل خدعة اكتشفتها في فيتنام ، حتى لو كانت هذه الوصفة مستوحاة أكثر من تلك التي تذوقتها في الصين. الصلصة لذيذة وحلوة ومنفصلة جيدًا. في كل مرة أقوم فيها بإعداد هذه الوصفة ، يفاجأ الناس بالقوام الرائع والنكهة التي لا تضاهى. إنها دائمًا ضربة ناجحة في حفل عشاء. دوركم الآن !
مكونات :
400 جرام لحم ضلع ستيك
2 بياض بيضه
ملح
فلفل
السكر
5 نكهات
نشا التابيوكا
صلصة الفلفل بالكراميل:
140 جرام سكر
340 مل ماء
2 فصوص من الثوم
1 ج. قهوة nuoc mam
4 ملاعق كبيرة. صلصة الصويا
4 ملاعق كبيرة. صلصة المحار
فلفل أسود من المطحنة
4 ملاعق كبيرة. طحين الأرز
تعليمات
تذهب لهذه الوصفة ، تحتاج إلى صنع كراميل جاف. لا داعي للذعر ، إنه سهل للغاية! ضع المقلاة (أو مقلاة) على نار عالية إلى حد ما. أضف ربع السكر.
هز المقلاة لنشر السكر.
سوف تبدأ في الذوبان. يمكنك خفض الحرارة أو زيادتها حسب الحاجة.
عندما يذوب كل شيء ، اسكب ربعًا إضافيًا.
رج مرة أخرى لتوزيعه بالتساوي.
افعل نفس الشيء حتى تنتهي من إضافة كل السكر. يجب أن تحصل على كراميل لطيف.
ثم صب الماء.
سوف ينفجر الكراميل تحته.
سخنيها حتى يذوب كل الكراميل. ثم نضيف فصوص الثوم المهروسة في عصارة الثوم.
أضف nuoc mâm ، صلصة الصويا.
صلصة المحار. اتركه يطهى لمدة 3-4 دقائق. الفلفل جيدا لأنها فكرة الوصفة!
يُسكب دقيق الأرز في وعاء صغير.
صب القليل من الماء ، ما يكفي لإذابة الدقيق.
تخلط جيدا ثم تصب في الصلصة. امزج محتويات المقلاة على الفور.
يُغلى المزيج على نار خفيفة. سوف تتكاثف الصلصة.
بالنسبة للحوم: قم بإزالة الدهون.
أنا أستخدم مغرض اللحوم لهذه الوصفة. إنه فعال للغاية.
إذا كان لديك واحد ، قم بوخز اللحم على سطحه بالكامل ، على كلا الجانبين.
ثم قطعها إلى قطع صغيرة الحجم.
نسكبه في وعاء به بياض البيض. ملح ، فلفل ، صب قطعتين من السكر وثلاث رشات جيدة و 5 نكهات.
اخلط جيدا. صب جرعة جيدة من نشا التابيوكا في وعاء آخر.
قم بإسقاط القطع في النشاء بيد واحدة ، وباستخدام اليد الأخرى غلفها بالنشا.
افعل نفس الشيء مع كل اللحوم.
اتركيه للراحة لمدة 10-15 دقيقة. سخني مقلاة (أو مقلاة) من الزيت إلى 180 درجة مئوية. نسكب بعض اللحم ونترك القطع بنية.
عندما يفعلون ذلك ، أخرجهم من الزيت واتركهم جانبًا بينما تقلى في المرة التالية.
عندما ينضج كل اللحم ، اسكبه في مقلاة الصلصة الحارة.
يسخن على نار خفيفة ويغطى جيدا.
يقدم على الفور مع الأرز الأبيض والقليل من الفلفل!

Vu que je n'avais pas envie de me retrouver avec un ingrédient que je ne réutiliserais peut-être pas, j'ai remplacé la fécule de tapioca par de la fécule de maïs, ça croustille aussi !

Vu que je n'avais pas envie de me retrouver avec un ingrédient que je ne réutiliserais peut-être pas, j'ai remplacé la fécule de tapioca par de la fécule de maïs, ça croustille aussi !
