Belle recette comme d’habitude.
Au vu des commentaires je m’étais préparé psychologiquement à manipuler cette pâte 🙂
J’ai réussi à faire les pliages au final mais cela n’a pas été facile. J’ai perdu du sucre.
Et c’est pourquoi j’ai trouvé à la dégustation que cela manquait d’un petit quelque chose.
Au final, on sent bien le sarrasin, l’extérieur est croustillant mais il manque un petit quelque chose: peut-être les pommes qui n’étaient pas assez sucrées.

Pareil pour cette présente recette. Pourtant j'utilise une excellente farine, très cotée par les crêpiers (dont j'ai été). Et le goût disparaît encore plus quand il y a un ingrédient additionnel comme le chocolat. Je sais que le blé noir ne monde pas, d'où la grande quantité(en générale) de farine de froment qu'on lui adjoint, mais pour ma part, je préfère inverser les proportion, et augmenter la levure

Extrêmement difficile à refermer après avoir mis le beurre et le sucre. La pate se déchire beaucoup. J'y suis arrivée mais pas sûre que je retente… d'autant que moi qui aime beaucoup les crêpes au sarrasin, j'ai eu du mal avec l'association sucrée, le goût du blé noir étant trop présent. Mais je salue l'audace de la tentative qui malheureusement n'est pas à mon goût.
Mais beaucoup d'autres recettes réussies et qui me tentent encore.

Je referai avec sans doute un peu moins de beurre (même si le côté kouign-aman du gâteau est top, je vais essayer avec 50g de moins, on verra bien). Le gâteau était encore meilleur froid le lendemain, à ma grande surprise il était plus croustillant. Merci encore Bernard et vivement le livre salé !
